Saudi Arabian cuisine is complex and subtle in its flavors, with its use of spices such as cinnamon,
cumin, cardamom, and ginger. Garlic, olive oil, sesame paste, yogurt, lemon, and many herbs also
flavor Saudi Arabian dishes. Staple foods are meat, especially lamb; rice; wheat; legumes; and
vegetables such as tomatoes, summer squash, eggplant, onions, and potatoes. Saudi Arabia produces extremely
high-quality coffee, and a thick, sweet coffee flavored with cardamom is enjoyed by many throughout the day.
Saudi Arabians also enjoy delicious phyllo pastries filled with nuts and sweetened with syrup.

(Arabic Coffee)

Arabic coffee is prepared in a dellah, a small pot with a narrow neck, and it is the
oldest method of making coffee. Very finely ground coffee is boiled in the dellah
with spices such as cardamom, ginger, and saffron added during the brewing
process. If sugar is added, it is done during brewing as well. The result is an
intense, very black (no cream is ever added), thick coffee that is served in small
cups without handles. In Saudi Arabia, serving guests a cup of coffee is a sign
that a guest is welcome and honored.

Kabsa is commonly regarded as the national dish of Saudi Arabia. This delicious
