Portuguese cuisine varies regionally, and it is simple, hearty, and flavorful. The cuisine of Portugal
is similar to that of Spain; however, Portuguese cooks enjoy a stronger use of garlic, and they make
unusual combinations, such as seafood and pork, in the same dish. Seafood of all kinds is used, but
dried salt cod, called bacalao, is the most popular. A great variety of vegetables and greens are grown in Portugal,
and bread made with cornmeal or wheat flour accompanies every meal, and rice is widely used. The Portuguese
enjoy a variety of sweet desserts and pastries. The main seasonings are garlic, salt, lemon, mint, coriander, and
parsley, and olive oil flavors many Portuguese dishes.

Pastéis de bacalhau is a great Portuguese favorite, and it is considered a national
specialty. Codfish fritters are ideal fare for snacks (hot or cold) and they are
featured at functions from the most sophisticated to the humblest. If you cannot
find, or do not like, salted cod, this recipe is also very nice made with fresh cod.
