Spanish cuisine varies regionally, and each region is unique, yet there is a national character to
Spanish dishes. Spanish cuisine is noted for its fresh, natural flavors, without a lot of spicy hot
seasoning. All regions enjoy nutritious meat and bean stews called cocidos, and paellas are enjoyed
in the rice-growing flat coastal plains of the southeast as well as the northern Atlantic provinces. Chicken, fish
and seafood, eggs, olives and olive oil, tomatoes, garlic, and onions are staple foods in Spain. Potatoes are a favorite,
and a potato omelet called tortilla española is popular everywhere. Crusty white bread accompanies most meals,
and almond-based sweets make popular desserts. Eating in Spain is a social affair, and little dishes called tapas are
served in bars and cafés throughout the country.
