Recipes From Mongolia
Mongolian cuisine is determined by the country’s nomadic way of life and herding traditions.
Meat, noodles, and dairy products are staple foods, and dried mutton, cheese, yogurt, and
unleavened flatbread are consumed regularly. Meatballs, sausages, and dumplings of all kinds are
popular, and Mongolians often begin their day with a warming breakfast of noodles in broth. The main vegetables
are cabbage, turnips, onions, and carrots. Mongolians consume large amounts of animal fat because of the severe
weather in winter, and fat drippings are used to make a delicious bouillon.
